Summary
Vegetable quality is a core determinant of commodity value, consumer preference, and nutritional benefits. With increasing demands for high‑quality horticultural products, uncovering the mechanisms underlying vegetable quality formation and regulation has become a critical research hotspot.
This Special Issue aims to gather original research and reviews advancing our understanding of vegetable quality. It welcomes studies covering molecular, physiological, metabolic, and post‑harvest regulatory mechanisms of vegetable quality.
Suggested themes include: biosynthesis and regulation of primary and secondary metabolites; genetic improvement of vegetable quality; pre‑harvest environmental and agronomic modulation; post‑harvest quality maintenance; multi‑omics dissection of quality traits; and germplasm screening for superior quality in vegetables.
